Burnt honey, sage and lemon balm fizz

- In a small pan over a medium heat, add the honey and cook for 3-4 minutes until it darkens slightly and develops a deep caramel aroma. Carefully add the water and sage leaves, allowing it to bubble and loosen into a syrup, then remove from the heat, add the lemon juice and allow to cool.
- In a large jug, gently bruise the lemon balm leaves to release their oils. Add the honey syrup and sparkling water, stirring to combine.
- Fill the glasses with ice, pour over the mixture and top with sparkling water.
