Hot cross bun dalgona coffee

- Combine the brown sugar, dried fruit, 60ml water, orange peel, cinnamon and allspice in a saucepan.
- Bring to the boil, then simmer for 2 minutes, until fragrant. Remove from the heat, allow to cool slightly, then strain.
- Divide the syrup between two glass mugs. Heat the milk until hot but not boiling, and pour it over the syrup. In a small jug, combine the instant coffee, sugar and 2 tbsp boiling water.
- Whisk using a milk frother for 3–5 minutes until thick, pale and fluffy. Spoon the whipped coffee over the hot milk and serve immediately, stirring before drinking.
