  1. Add the frozen pineapple, dragon fruit, lemon juice, monkfruit sweetener and coconut water to a high-speed blender. Blitz until smooth and slushy. If the mixture is too thick, add a little more water until it reaches a pourable, icy texture. If you prefer it extra cold, add a few ice cubes and blend again. Adjust the sweetness or tartness to your taste.
  2. Pour into chilled glasses and decorate with pineapple slices.
  3. Serve immediately.
