Strawberry cloud matcha

- Place the strawberries, honey and lemon juice in a saucepan and cook gently until the fruit softens.
- Blend until smooth, then strain through a sieve to remove the seeds.
- Place 2 tablespoons of strawberry purée into the base of each glass and fill with ice.
- Whisk the milk with the vanilla seeds and remaining strawberry purée to create strawberry milk.
- Pour gently into the glasses.
- Whisk the cream and matcha powder together until lightly thickened but still pourable.
- Spoon the matcha cream over the strawberry milk and dust with a little extra matcha before serving.
