Açaí and chia ice pops

- Place the chia seeds, coconut milk, honey and vanilla extract in a bowl. Stir well and let sit for 10–15 minutes, stirring occasionally, until slightly thickened.
- In a blender, combine the açaí purée, banana, milk and the thickened chia mixture. Blitz until smooth and creamy. Pour the mixture evenly into 6 popsicle moulds, tapping the moulds gently on the counter to remove air bubbles. Insert sticks and freeze for at least 6 hours, or overnight, until fully set.
- When ready to serve, briefly dip the moulds in warm water to release the pops. Dip each frozen pop into coconut milk, then into desiccated coconut to coat.
- Serve immediately or return to the freezer until ready to enjoy.
