Blueberry and chamomile bedtime mocktail

- Boil the water then pour over the chamomile tea bags and steep for 8–10 minutes. Strain and stir in the maple syrup, if using. Let it cool slightly.
- In a blender, combine the cooled chamomile tea, blueberries, lime juice and rose water. Blitz until smooth, then strain through a fine mesh sieve for a silky finish. Refrigerate until chilled.
- Whip the coconut cream and maple syrup until soft peaks form. Adjust the sweetness to taste.
- Remove the chamomile from the tea bags and plate in a shallow dish or plate. Rub half a lime up the side of the glasses, then press the glasses into the chamomile flowers.
- Pour the blueberry chamomile mix into glasses and top with whipped coconut cream.
- Serve with extra chamomile flowers, if desired.
