Frozen rooibos spritz

- Place two serving glasses in the freezer to chill.
- Boil the still water, pour it over the rooibos tea bags in a heatproof jug or bowl, and steep for 10–15 minutes.
- Remove the tea bags and pour the tea into a small saucepan. Add the sugar and 100ml orange juice, squeeze in the lemon juice, and bring to a boil over high heat. Simmer until reduced by half, then remove from the heat and let cool completely.
- Once cooled, add ice to a blender and blitz on high until you get a fine, snow-like texture.
- Scoop the crushed ice into the chilled glasses, filling them halfway. Pour over the rooibos syrup, divide evenly and top with orange juice and sparkling water.
- Slice the orange into 1cm half-moons, decorate each glass with a slice, and serve immediately.
