Krummelpap with amasi and brown sugar

- Bring the water and salt to a boil in a medium-sized pot. Quickly add in the maize meal while stirring – it will be slightly clumpy. Once combined, cover the pot with the lid, lower the heat and steam for approx. 10 minutes.
- Remove the lid and fluff the pap with a fork until it forms coarse grains. Return the lid to the pot and steam for a further 15–20 minutes, stirring occasionally to break up clumps.
- Divide the pap between bowls, top with the amasi or buttermilk and a sprinkle of sugar.
- Serve while warm.
