Pineapple and lime kefir oat parfait

- In a bowl, combine the oats, kefir, milk, chia seeds and honey. Zest and juice a lime before adding to the bowl. Stir well, cover and refrigerate overnight or for at least 4 hours until thick and creamy.
- Slice the pineapple into cubes, zest a lime, then toss both with the sweetener. Set aside to macerate until ready to assemble.
- To make the seed topping, mix the seeds with a pinch of salt. Store the topping in a sealed jar for up to one week.
- To assemble, layer the kefir oats and pineapple mixture in jars or glasses, finishing with a generous spoonful of the toasted seed mix.
- Serve chilled with an extra drizzle of kefir or honey.
