- Using a vegetable peeler, thinly slice the cucumbers into strips and set aside. Pit the avocado.
- Place the avocado, lemon juice, chilli flakes, salt and freshly ground pepper in a large bowl. Using a fork, mash to combine.
- Peel and shred the carrot.
- Remove the ribs from the kale and place on a platter. Top with the avocado mixture, carrot, cucumber, salmon and sprouts.
- Top with a dressing of your choice.
