Turkey Parmigiano and cottage cheese waffle sandwich

- In a blender, combine the cottage cheese, 20g Parmigiano Reggiano, egg whites, oats, baking powder and salt. Blitz until smooth.
- Preheat a waffle maker and lightly spray it with avocado oil.
- Pour the batter into the waffle maker and cook until golden and crisp.
- Meanwhile, toss the rocket lightly with olive oil, black pepper and 20g shaved Parmigiano Reggiano.
- Once the waffles are ready, stack the sandwich with slices of turkey, rocket and top with another waffle.
- Serve while warm.
