Light (with just 15% fat) and creamy, Elle and Vire Professional Advantage cooking cream may be used hot or cold. This cream is extremely stable and offers excellent hold in a bain-marie. Ideal for buffets and catering, this cream offers fantastic value for money. The carton is re-sealable thanks to an airtight cap for easier conservation and more precise dosage. A staple for at-home chefs, it provides a base for many dishes and can be used in desserts too.
Details
Cream is a dairy product composed of the higher-fat layer skimmed from the top of milk before homogenization. In un-homogenized milk, the fat, which is less dense, eventually rises to the top. In the industrial production of cream, this process is accelerated by using centrifuges called "separators". The amount of butterfat will determine how well it will whip and how stable it will be. Higher fat creams tend to taste better, have a richer texture, and don’t curdle as easily when used in cooking.
