Asian style sea bass

  1. Preheat oven to gas mark 5/190°C (170°C in a fan oven)
  2. Place a large piece of tin foil on a baking tray, use enough so that the fish can be wrapped up like a parcel later. Pop the 2 white fish in the middle of the tin foil.
  3. Open the fish up and stuff full with fresh ginger (medium, sliced lengthways), 3 roughly sliced spring onions, 4 finely sliced garlic cloves and the 2 finely chopped chillies. Drizzle the soy sauce into the fish and sprinkle with the roughly chopped coriander.
  4. Using the foil make a parcel around the fish and close it tightly at the top.
  5. Place on a tray in the oven for 20-30 minutes. Serve with lemon wedges and your choice of side dishes.
