  1. To make the dressing, combine the mayonnaise, ketchup, horseradish, Worchestershire sauce and vinegar in a bowl. Set aside.
  2. Drain the sauerkraut.
  3. Lay out the slices of rye bread. On four of the slices, spread a generous amount of the vegan Russian dressing. Top with the grilled aubergine slices followed by the vegan cheese and sauerkraut.
  4. Place the remaining slices of rye bread on top to close the sandwiches.
  5. Serve immediately.
