Balsamic roasted plum salad with buffalo mozzarella, toasted almonds and basil

  1. Stone and halve the plums.
  2. Lightly toast the almond flakes.
  3. Preheat the oven to 200°C, gas mark 6.
  4. Place the plums cut side facing up in a small deep roasting tray or oven dish.
  5. Pour over the balsamic vinegar and roast in the oven for 10-15 minutes, basting every 5 minutes with the vinegar until glossy and soft.
  6. Remove from the oven and set aside.
  7. Tear the mozzarella and place on a platter, arrange the sticky plums around the cheese.
  8. Sprinkle the basil leaves over along with the almonds, and drizzle with the olive oil.
