  1. Place the beef bacon in a cold pan placed over a medium heat and cook until crisp. Remove from the heat.
  2. In a medium pot of boiling water, cook the eggs for 7 minutes then submerge in ice water. Once cool enough to handle, remove the shells from the eggs and slice.
  3. Slice the tomatoes and leftover chicken.
  4. To assemble, divide the mayonnaise and mustard between 2 slices of bread, top with gem lettuce, tomato slices seasoned with salt, sliced chicken, bacon and egg. Repeat with the remaining slices of bread.
  5. Serve immediately.
