  1. In a large pot placed over a medium heat, combine the chicken stock, fresh ginger, spices, lime leaves, fish sauce soya sauce and the 2 garlic cloves. Leave to simmer for 10 minutes. Season to taste.
  2. Prepare the noodles according to the package instructions.
  3. To serve, evenly distribute the noodles between four bowls and top with the carrots, spring onions, chilli and coriander. Ladle in the broth and serve.
