Falafel-spiced sweet potato chips

  1. Heat a large pot of oil to 160°C.
  2. Finely slice the sweet potato using a mandolin or a sharp knife.
  3. Working in batches, place the slices in the hot oil and fry until crisp and golden, approx. 2-3 minutes. Drain on paper towels.
  4. Combine the salt and spices and set aside.
  5. Place the chips in a serving bowl and sprinkle with the falafel spice.
  6. Serve immediately.
