Home-made vanilla cardamom cashew butter

  1. Preheat the oven to 180°C, gas mark 4.
  2. Scatter the cashews onto a baking tray and roast for 5 minutes, or until golden brown.
  3. In a food processor, combine the warm cashews, whole vanilla bean, honey, cardamom and salt.
  4. Process on a high speed for 10-15 minutes, scraping down the sides of the bowl as necessary.
  5. This will keep up to 1 month in a cool place.
