Iced vanilla blueberry latte

  1. Combine the blueberries, sugar and vanilla extract in a small pot placed over a medium heat. Cook until the blueberries burst and the liquid has reduced to a jammy consistency, approx. 5-10 minutes.
  2. Allow to cool then place in a blender. Blitz until completely smooth and combined.
  3. Divide the mixture between four glasses and top with milk, ice and espresso.
