Milk and honey roast chicken

- Season the chicken generously with salt and leave uncovered in the refrigerator overnight.
- Preheat the oven to 180°C, gas mark 4.
- Heat the olive oil and butter in a deep roasting pan and brown the chicken on all sides. Remove the chicken and discard most of the fat, leaving the browned bits in the pan.
- Add the milk, garlic, thyme, citrus peels, honey and chilli flakes. Return the chicken to the pan breast-side down.
- Roast for 1 hour, then turn the chicken breast-side up and cook for another 15 minutes until golden.
- Serve immediately.
