  1. Melt the butter in a large cast-iron or non-stick frying pan placed over a medium heat.
  2. Sprinkle in the chilli flakes and top with the eggs.
  3. Cook according to preference.
  4. Slice the bagels in half and toast until golden.
  5. Divide the cottage cheese (or cream cheese) between the bagels and evenly spread over one side.
  6. Top with the watercress, onion sprouts and fried eggs.
  7. Serve immediately.
