Pluot and thyme iced tea

  1. Pit and roughly chop 350g pluots.
  2. Place the sugar, water and pluots in a small saucepan and bring to a boil.
  3. Simmer for 3-5 minutes or until the pluots have softened.
  4. Add the tea bags, thyme and cinnamon and allow to steep.
  5. Strain the syrup once it reaches room temperature.
  6. Pour the syrup into a large jug and add the ice cubes to it.
  7. Pit and slice the remaining pluots (approx.12-13) and add them to the jug.
  8. Top with the sparkling water.
