Quiche Lorraine

French 15 Mins Prep · 70 Mins Cook

  1. Preheat the oven to 220°C, gas mark 7. Roll out the pastry on a lightly floured surface then chill in the fridge for 30 minutes.
  2. Line the base and sides of a 20cm loose-bottomed tart tin with parchment paper and weigh it down with baking beans. Place on a baking sheet and bake for 10 minutes. Remove the beans and paper and bake the empty case for a further 10 minutes, or until the base is lightly browned.
  3. Reduce the oven temperature to 180°C, gas mark 4.
  4. Place a frying pan over a medium heat. Fry the beef bacon for 10 minutes. Using a slotted spoon, transfer to the cooled pastry case. Leave the juices in the pan.
  5. Place the chopped onion in the same pan and cook over a medium heat for 8 minutes or until golden. Add to the pastry case and sprinkle over the cheese.
  6. In a bowl, combine the eggs, cream, salt and pepper, then pour into the pastry case.
  7. Bake for 25–30 minutes until golden and just set.
  8. Serve with a simple salad.
