Roasted side of salmon with pea and dill pesto

- Preheat the oven to 200°C, gas mark 6.
- Season the salmon with 2 tbsp olive oil, salt and lemon zest and leave for 1 hour.
- Blend the peas, dill, 100ml olive oil, pine nuts, garlic, sumac, lemon juice and cheese until smooth.
- Place a baking tray in the oven until very hot. Brush the salmon with olive oil and place on baking paper.
- Transfer to the hot tray and roast for 10 minutes.
- Serve with the pesto.
