Saffron cardamom pancakes

  1. For the pancakes, whisk all the ingredients together in a large bowl until completely smooth.
  2. Heat 1 tsp of the oil in a large, non-stick frying pan over a high heat. Add 125ml (½ cup) of the batter and swirl to coat the base of the pan.
  3. Cook for 2-3 minutes on one side or until the pancake is cooked through and the edges are lightly browned and crisp.
  4. Set aside and keep warm.
  5. Serve immediately, drizzled with maple syrup and dusted with icing sugar.
