Smoked butter with roasted garlic and thyme

  1. Place the garlic on a piece of foil, drizzle with the olive oil and season well. Wrap it tightly and place inside low coals for 20 minutes or until softened and caramelised.
  2. Place the butter in a medium bowl and use an electric mixer to whip it until fluffy.
  3. Pick the thyme leaves.
  4. Squeeze out the soft garlic cloves and add to the butter along with the thyme leaves. Mix well before using.
