Spicy prawn and tomato white bean salad

  1. Toss the prawns with their heads removed and deveined and tomatoes halved in the harissa paste.
  2. Heat a pan with a little olive oil over a high heat and flash-fry the prawns for 2-3 minutes or until charred.
  3. Add the drained cannellini beans and toss to coat.
  4. Season well with the salt and pepper and serve immediately with the fresh parsley.
