Ingredients

  • Spinneysfood Strawberries 250g, chopped
  • Spinneysfood Organic Natural Honey 100g
  • Lemon 1, juice
  • Spinneysfood Fresh Milk 600ml
  • Vanilla bean 1, seeds scraped
  • Ice To serve
  • Single cream 125ml
  • Matcha powder 2 tsp, plus extra for dusting

Strawberry cloud matcha

  1. Place the strawberries, honey and lemon juice in a saucepan and cook gently until the fruit softens.
  2. Blend until smooth, then strain through a sieve to remove the seeds.
  3. Place 2 tablespoons of strawberry purée into the base of each glass and fill with ice.
  4. Whisk the milk with the vanilla seeds and remaining strawberry purée to create strawberry milk.
  5. Pour gently into the glasses.
  6. Whisk the cream and matcha powder together until lightly thickened but still pourable.
  7. Spoon the matcha cream over the strawberry milk and dust with a little extra matcha before serving.
