  1. Peel and grate the garlic. Slice the chicken into thick strips.
  2. In a medium-sized bowl, combine half the olive oil, garlic, sliced chicken and the fajita seasoning. Toss to combine.
  3. Heat the remaining oil in a large non-stick pan over a medium heat.
  4. The spiced chicken and sauté for 15 minutes or until charred and cooked through. Add the peppers and cook for 5 minutes or until warmed through.
  5. Chop the spring onions. Quarter the lime.
  6. Serve the fajitas with the chopped spring onions, lime wedges, crème fraîche, roughly torn coriander, and corn tortillas.
