  • Fresh or frozen blackberries 200g
  • SpinneysFOOD Fine Grain White Sugar 70g
  • Lemons, juiced and sliced 2
  • Vanilla extract 1 tsp
  • SpinneysFOOD Fresh Thyme 7 sprigs
  • Water 1 tsp
  • Crushed ice, to top As desired
  • Lemonade or soda water 500ml

Thyme and blackberry bramble

  1. To make the blackberry syrup, combine the blackberries, sugar, lemon juice, vanilla, thyme sprigs and water in a medium-sized pot. Place it over medium-low heat and cook, stirring, until the berries start to break down, for approximately 8 minutes.
  2. Stir until thickened and blend the mixture until smooth. Strain if desired. Refrigerate until completely cool.
  3. Distribute the syrup equally between four glasses, top with the crushed ice, a slice of lemon and a sprig of thyme. Pour the lemonade into the glasses and serve.
