Vegan spiced mince and mint flatbreads

  1. Dice the onion and crush the garlic clove
  2. Heat a pan over a medium-heat and add the oil.
  3. Sauté the onion and garlic for a few minutes until translucent, then add the Meatless Farm Meat Free Mince and cook until browned.
  4. Add the spices, harissa and apricots and cook for another 2 minutes.
  5. To prepare the dressing, chop the mint and crush the garlic clove.
  6. Zest and juice the lemon.
  7. Add all the dressing ingredients to a bowl and mix well.
  8. Warm the flatbreads in the oven for a few minutes then remove.
  9. Add a generous dollop of dressing over each flatbread and spoon over the spiced mince.
  10. Garnish with the fresh mint, chopped toasted almonds and olive oil and serve immediately.
