AG1 granita with pineapple salad

- In a bowl, whisk together the AG1 powder, coconut water, pineapple juice and lemon juice until fully dissolved.
- Pour into a shallow container and freeze overnight until solid.
- In a separate bowl, combine the pineapple cuts with chia seeds, lime zest and torn mint leaves.
- Using a fork, scrape the frozen AG1 mixture to form granita crystals.
- Spoon the pineapple salad into serving bowls and top with the granita. Serve immediately.
