Cheesy wholegrain mustard potato bake

- Preheat the oven to 200°C, gas mark 6.
- Thinly slice the potatoes, leaving the skin on. Mince the garlic and pick the thyme leaves.
- Butter a large baking dish. Arrange half the sliced potatoes on the base. Season with salt and pepper. Scatter over fresh thyme and spread half of each cheese over the potatoes.
- Layer the remaining potatoes on top and season again. Mix the mustard and cream in a jug and pour evenly over the potatoes. Sprinkle the remaining cheese over the top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for further 15 minutes more until golden and bubbling.
