- Finely slice the cucumber in half and then into strips at a diagonal. Place them in a medium-sized bowl along with the salt. Toss well to combine and set aside for 30 minutes to draw out the excess moisture.
- In a small bowl, combine the dressing ingredients and set aside.
- Drain any excess liquid from the cucumbers and rinse thoroughly. Add the dressing to the cucumbers and toss well to combine.
- Serve immediately.
