Pansy blossom iced tea with boba

- Place the flowers in a large teapot or jug. Bring 500ml of water to a boil and pour over the flowers. Cover and allow to steep for 20 minutes. Strain through a sieve and stir in the honey to taste. Set aside to cool.
- Meanwhile, prepare the boba. In a small saucepan, bring the remaining water to a boil and add the boba pearls. Cook according to package instructions or until the boba float. Scoop them out and allow to cool.
- When ready to serve, spoon the boba into two glasses. Add the ice cubes. Pour over the iced tea and decorate with more viola flowers.
- Serve immediately.
