Rainbow power pops
Other 20 Mins Prep
- In a blender, blitz together the yoghurt, kefir, honey, banana and cinnamon until smooth. Taste and adjust the sweetness, if needed. Divide the base mixture evenly into three separate bowls or blender jugs.
- To make the red layer, blend the base with the berries and pomegranate juice. To make the green layer, blend the base with the kiwi, spinach and lemon juice. To make the blue layer, blend with blueberries and spirulina. Add a splash of water if the mixtures need to be looser. Strain through a sieve to smoothen the texture (optional).
- Pour the red mixture into popsicle moulds, filling 1⁄3 of the way. Freeze for 30–45 minutes to set slightly. Repeat this process with the blue/purple layer, followed by the green layer. Gently tap the moulds on the counter to remove any air bubbles. Insert the popsicle sticks and freeze for at least 6 hours or overnight until solid.
- Briefly run the moulds under warm water to release the pops.
- Serve immediately.
