Sheet pan lamb kebabs with dates and pomegranate glaze

- Preheat oven to 200°C, gas mark 5. Line a 20cmx20cm sheet pan with baking paper.
- In a bowl, mix the lamb mince with the onion, garlic, parsley, spices, salt and pepper. Stir in the dates.
- Press the mixture evenly into the sheet pan. Bake for 20–25 minutes, until the top is browned. Brush with pomegranate molasses and return to the oven for 5 minutes.
- Allow to cool slightly, then slice into thin kebab strips. 5 Serve in warm flat breads with yoghurt, salad and pickles.
