  • Medjool dates 4, finely chopped
  • Pomegranate molasses 2 tbsp
  • Flat breads To serve

Sheet pan lamb kebabs with dates and pomegranate glaze

  1. Preheat oven to 200°C, gas mark 5. Line a 20cmx20cm sheet pan with baking paper.
  2. In a bowl, mix the lamb mince with the onion, garlic, parsley, spices, salt and pepper. Stir in the dates.
  3. Press the mixture evenly into the sheet pan. Bake for 20–25 minutes, until the top is browned. Brush with pomegranate molasses and return to the oven for 5 minutes.
  4. Allow to cool slightly, then slice into thin kebab strips. 5 Serve in warm flat breads with yoghurt, salad and pickles.
