Smoked paprika and lemon butter grilled lobster

- Mince the garlic. Zest and juice a lemon. Finely chop the parsley.
- In a medium-sized bowl, combine the melted butter with the garlic, lemon, parsley, lemon paste, paprika salt and pepper to make a flavourful base.
- Place the halved lobsters, cut-side up, on a large tray. Brush the butter mixture generously over the lobster flesh.
- Preheat the grill to medium-high heat or use a griddle pan.
- Place them flesh-side down on the grill for 3–4 minutes until lightly charred. Flip the lobsters, baste with more butter, and continue grilling for a further 3–4 minutes until the meat is opaque and just cooked through. Be careful not to overcook, as this can make the lobster tough.
- Remove the lobsters from the grill and arrange them on a platter with salt.
- Serve with lemon wedges and fresh dill.
