  1. Place the sushi rice in a bowl with cold water, gently mix by hand and drain. Repeat this step 3 to 5 times until the water becomes clear. Place the water in medium-sized pot and add in the washed rice. Place over a medium heat and bring to a boil. Simmer over a low heat with the lid on for 10-15 minutes or until all the water has been absorbed.
  2. Remove from the heat and stand for 10 minutes with the lid on. Remove from the pot and place in a large bowl to cool down.
  3. Mix the rice vinegar, caster sugar and salt in a bowl until the salt and sugar dissolve.
  4. Pour over the rice and mix together. The rice can be stored in the fridge for up to 2 days
