Wasabi mustard salmon tostada

  1. Combine the salmon and red onion with the soy sauce, sesame oil and 1 tbsp toasted sesame seeds. Toss gently to combine and set aside.
  2. In a blender, combine the mayonnaise, a handful of wasabi mustard leaves, rice vinegar, caster sugar and a pinch of salt. Blitz until smooth and vibrant green.
  3. Spoon a layer of the wasabi mustard mayo onto each crispy wonton. Top with a wasabi mustard leaf and a spoonful of the salmon mixture.
  4. Finish with the chives and extra sesame seeds before serving immediately.
