Download PDFStir the flour and salt together and set aside. In a large mixing bowl, whisk the yeast into the water. Wait 2 minutes and whisk again to dissolve. Add the oil.
Stir half the flour into the liquid and then add the remaining flour.
After all the flour is moistened, use a spatula to beat the dough vigorously for 15 seconds. Cover with cling film and allow to rise until doubled in size – approx. 1 hour.
Use the dough with any of the following variations: spinach and feta focaccia, honey and thyme focaccia, and pepperoni focaccia.
