Download PDFTo make the muhammara, combine all the ingredients together in a food processor and blend until smooth. Set aside.
To prepare the kofta, combine the rinsed and finely chopped leeks, garlic clove, herbs, spices, lemon zest and seasoning in
a medium-sized bowl.
Add the chicken mince and mix well to combine.
Divide into 8 equal parts and shape into 10cm sausages.
Thread the sausages onto skewers and oil a preheated grill rack.
Wrap the kofta in the courgette ribbons and secure with a toothpick if need be.
Grill the kofta turning after 5 minutes until cooked through. Rest on a cutting board for 5 minutes.
To assemble the dish, spread the muhammara on a serving dish and top with the kofta.
Combine the leftover courgette ribbons, spinach, olive oil, lemon juice and seasoning together and serve with the kofta.
