Download PDFHeat the oven to 150°C, gas mark 2. Line a large baking tray with baking paper.
Combine the pitted dates, crushed fresh ginger and water in a small saucepan.
Cook until the dates begin to break down and become soft. Place the dates and liquid in a food processor or blender with the salt, coconut oil, spices and pulse until smooth.
Combine the oats, crushed almonds and the granola in a large bowl and stir in the date mixture. Mix well to coat.
Pour out onto the prepared baking tray and bake for 1 hour, stirring every 20 minutes or so, until golden.
Mix in the chopped ginger.
Store in an airtight jar or container for up to 4 weeks.
