Download PDFPreheat the oven to 200°C, gas mark 6. Line a baking sheet with baking paper. Chop the jalapeños.
Place 2 tbsp of the Cheddar on the prepared sheet into rough 5cm circles.
Bake for 8 minutes or until bubbly and golden. Allow to cool then remove from the baking sheet and break into pieces
Halve the hard-boiled eggs and remove the yolks. Place the yolks in a small bowl and mash with a fork.
Add the mayo, cream cheese, jalapeño and mix well. Season.
Spoon the mixture into the egg whites, top with the crispy cheese and coriander leaves.
