Download PDFPreheat the oven to 200°C, gas mark 6. Line a baking sheet with baking paper.
Place the pizza bases on the baking sheet. Brush with 2 tablespoons of the olive oil.
Grate the cheese and sprinkle evenly over each base.
Heat the remaining olive oil in a frying pan over a medium heat.
Peel and finely slice the onion. Slice the capsicum into strips. Add the onion and capsicum to the pan. Sauté until soft and slightly caramelised, approx. 5-7 minutes.
Shred the chicken breasts and place it in a mixing bowl. Add in the BBQ sauce and smoked paprika and mix well.
Spread the BBQ chicken mixture evenly over the pizza bases. Scatter the onion-capsicum mixture over the chicken.
Bake the pizzas for approx. 10-12 minutes, or until the cheese is melted and bubbly and the crust is golden brown. Remove the pizzas from the oven.
Slice and serve immediately.
