Download PDFBring a large pot of salted water to a boil. Add the spaghetti and cook until al dente – about 8 minutes. Drain the spaghetti, then drizzle with olive oil and set aside.
Heat the olive oil in a saucepan. Add the finely chopped onion and sauté for 10 minutes until soft and translucent.
Add the 2 crushed garlic cloves to the saucepan and cook for 2 minutes.
Stir in the tomatoes and the rest of the ingredients. Season well.
Bring to a boil and simmer for 15 minutes.
Add the spaghetti to the pan and toss to coat.
Serve garnished with fresh, chopped parsley.
