Download PDFPreheat the oven to 200°C, gas mark 6. Line a baking tray with baking paper.
To make the yoghurt custard, whisk together the yoghurt, eggs, sugar, extract and salt in a small bowl.
Place the bread slices on the lined tray. Make a small indent in the centre of the bread using a tablespoon and divide the egg mixture between the 4 slices of bread.
Slice the figs or leftover fruit and place over the mixture.
Place in the oven to bake for approx. 5-10 minutes or until the custard has just set.
Serve with a sprinkle of icing sugar.
