A close relative of the onion, garlic is one of the most popular seasonings in the kitchen. Crushing, chopping or chewing a garlic clove releases the enzyme compounds responsible for the sharp taste and pungent smell, the plant’s defence mechanism. Cooking garlic removes a lot of the spiciness, but it is still recommended to include parsley in garlic recipes to combat the smells and tastes.
