Hershey’s cocoa powder is a natural, unsweetened variety. It is lighter-coloured with a fruitier-flavour than those made with a ‘Dutched’ cocoa. Natural, unsweetened cocoa powder retains its acidity, unlike most European ‘Dutched’ varieties which have been washed in an alkali solution to neutralise their pH levels. The natural acidity of Hershey’s cocoa powder, means that it reacts well with alkali products such as baking powder, creating a reaction that causes the sponge to rise.
